Für die Herstellung von Gelatine werden in Deutschland Knochen und Haut von Kälbern, Rindern und Schweinen als Rohstoffe wirtschaftlich genutzt. Die im Ossein und den Rinderspalten vorhandenen Bindungen werden nun basisch mit Kalkmilch und Natronlauge über einen Zeitraum von mehreren Monaten aufgelöst. Dabei werden auch andere störende Stoffe entfernt. Die so vorbereiteten Materialien werden nun mit Warmwasser versetzt und mehrstufig extrahiert. Die ersten Abzüge, die bei niedrigsten Temperaturen gewonnen werden, ergeben höchste Gallertfestigkeit der dabei ausgeschmolzenen Gelatine. Die entstandenen spröde Gelatine wird getrocknet. Die harte und spröde Gelatine wird anschließend zur Korngelatine gemahlen.
